Stir fry with noodles

Noodles 90g
Vegetables (dried peas, dried corn, dried mushrooms) 30g
Long life tofu 100g
Dried garlic 10g
Soy sauce 20g
Butter or oil 15g

1) Bring 100ml water to boil, add vegetables, simmer until rehydrated.
2) Drain water into a second pot, add remaining 200ml water.
3) Add noodles, bring to the boil again and simmer until cooked.
4) Drain.
5) Add oil and tofu to the pot with vegetables and gently fry.
6) Mix through soy sauce and dried garlic and gently fry.
7) Mix through noodles.
8) Season to taste.
9) Serve.

Variations: Instead of rice, try Couscous, Polenta or Quinoa. Consider using fresh vegetables that travel well: carrots, zucchinis, green beans. Instead of tofu, try tinned tuna, salmon or chicken.
