Mango Tapioca pudding
If you have never tried tapioca before you may find the texture is quite “different”. It is slimy and somewhat lumpy with little opaque balls floating around. There is not that much flavour associated with tapioca itself so it is what you do with it that counts. Other dried fruits or nuts can be added. Note that any variation will change the nutritional value.
Bag 1
Tapioca pearls ¼ cup 50 grams
Dried mango 4 pieces 25 grams
Coconut milk powder 4 tsp 12 grams
Vanilla sugar 2 tsp 8 grams
Soy milk powder 1 Tbsp 7 grams
Coconut sugar 1 tsp 4 grams
Keep separate
Water 1½ cup
Preparation at home
1) Label the bag and place all ingredients into the allocated bag.
2) Copy or print out Method at camp and keep together with the bag.
Method at camp
1) In a pot add the contents of the bag (pudding mix) and pour in 1½ cups of water, stir together.
2) Bring the pot to the boil then simmer for about 5 mins.
3) Take the pot off the heat, cover and sit for 5 mins.
4) Serve.
